On our honeymoon in Mexico, we discovered Palomas. Refreshing like the first jump in the pool on a hot day, they’re perfect to have with spicy food or on a lazy Sunday. I was never a huge fan of tequila, but have recently fallen in love. Plus, as a friend pointed out, tequila is made from agave rather than grain (like most other liquors). So instead of making you feel chubs and tired, it’ll make you feel like bouncing off the walls and jumping on the bed… or is that just me?
The recipe is something like this:
1.5 oz tequila
1/2 oz simple syrup
2 oz grapefruit juice
1 oz fresh lime juice
soda water to top
Line the rim of a glass with lime juice, then with kosher salt. Shake the first 4 items in a shaker (or layer if you like the color changes). Pour into a glass with ice, then top with soda. Yum. Welcome to sunshine.
